We knew early on how important strawberries were to our local economy since I grew up in Tampa, Florida. A few minutes away from Plant City where some of the best strawberries are grown. Each year we celebrate with a huge Strawberry Festival, and schools are even closed so that you can have a day to enjoy the festival. Strawberries are a part of our culture and intertwined in our food and traditions. Since strawberries are in season, I look specifically for Fresh From Florida strawberries to enjoy in our smoothies, to snack on, and for easy and refreshing lunch ideas like this strawberry feta salad.
It is certainly a blessing to be able to enjoy fresh food grown so close. I find comfort knowing that I can actually visit the farms where my strawberries have come from, and I can find them easily in my grocery store. I like to buy in-season produce since the prices are usually more affordable, and I know that everything is fresh. Strawberries have long been my favorite fruit, and it is a versitile fruit that can add flavor to whatever dish you’re preparing.
Since I work from home, I look for simple salads and fresh ingredients to keep moving throughout the day. I recently challenged myself to eat two salads a day to make meal planning easier, and I knew that adding spinach and strawberries could combine into a unique salad with a lot of complementary flavors.
It was easy to find Fresh From Florida strawberries since they are now in season in Florida. Florida farmers certainly make it easy to eat fresh produce year-round, and I always look for food, produce, seafood, and strawberries with the Fresh From Florida label.
To make salad prep even easier, prepare oven roasted chicken ahead of time. I usually bake several chicken breasts to use over the next few days to make this step fast. Pile diced chicken on top of a pile of greens (I prefer spinach) along with feta cheese crumbles, sliced strawberries, and your favorite salad toppings. Sliced almonds are a good pairing or croutons if you want an extra crunch. Balsamic is a tasty dressing to try with this or another oil-based dressing. You could also just use oil and vinegar too.

Salads are obviously one of the simplest and easiest things to make in the kitchen but there are a couple little tricks that can be employed to make them that much more delicious. One such trick is to season the greens before dressing them.
The dressing obviously has seasoning in it, but it can be very spread out and might not inject quite enough flavor into the salad itself. So, when you have all the salad ingredients in the bowl, lightly season them with a little bit of salt and pepper, stir them around, and then dress them. You will be amazed at how much better your salad will taste with a little pre-seasoning.
Another tactic that’s good to utilize is chilling the salad bowls before using them. It sounds a little over-the-top but if you simply stack the bowls you’re planning on serving the salads in and keep them in the fridge for 20 minutes before you serve them, the salad will be much better and more refreshing. Salad should be cold, and a chilled bowl will keep all the salad ingredients crisper and more fresh.

One 4-oz. raw boneless skinless chicken breast cutlet
Dash each salt and black pepper
3 cups roughly chopped spinach
1/3 cup sliced strawberries
2 tbsp. crumbled reduced-fat feta cheese
1 tbsp. finely chopped red onion
2 tbsp. light vinaigrette dressing
Pound chicken to an even thickness. Season with salt and pepper. Bring a skillet sprayed with nonstick spray to medium heat. Cook chicken for about 4 minutes per side, until cooked through.
Meanwhile, place spinach on a large plate or in a large bowl.
Slice or chop chicken, and add to the plate/bowl.
Top with all remaining ingredients except dressing.
Drizzle with dressing, or serve it on the side.

This is a go-to meal for me in the summer (er, in May when it’s as hot as summer?). It can be thrown together SO quickly. It doesn’t matter what ingredients you have in your fridge – you can make this work with pretty much whatever you’ve got.
- Fresh greens – You can use baby spinach, arugula, romaine, or a spring mix – or any combination of those! Really, any greens you like will work.
- Cucumber – Slices of cucumber are a must for me in this salad – they pair well with the other ingredients, and they add variety to the textures in this salad.
- Strawberries – These are the star of the show, naturally! I like to quarter them so they’re the perfect bite-size.
- Avocado – It adds healthy fats and a nice bit of creaminess to contrast with the crunchy elements of this salad.
- Walnuts – If you don’t like nuts, you can omit these or you can sub walnuts for something you like better that still gives a bit of crunch. I also think pecans would be delicious here if you prefer those to walnuts!
- Feta – It adds the perfect finish to the salad, and compliments the other flavors so well – and it gives a tiny bit of a salty hit which is lovely with the sweetness of the strawberries.
If you’re wondering where the dressing is, I keep it SUPER simple with this salad! I just give it a swish of olive oil and a sprinkle of salt and pepper. If that’s not your thing, my Poppyseed Dressing from this salad would work wonderfully here!

1. Whisk together lemon juice, olive oil, preserves and salt in a large bowl.

*To toast walnuts, add the walnuts to a hot, dry pan set over medium heat, only toasting as many walnuts as fit in the pan in a single layer. Cook walnuts, watching constantly and stirring frequently, for 1-2 minutes or until the walnuts start to brown and smell fragrant & toasted. Since the walnuts will burn easily in the pan, you must stir constantly to ensure even toasting until the walnuts turn a rich, golden brown. Remove walnuts to a plate or bowl to cool.

This salad is made 10x better with this Light Lemon Poppy Seed Dressing. It’s made with Truvia’s baking blend, which I absolutely love and add to my coffee each morning. It cuts down on the calories but keeps the sweetness.
